Description
Banana Cream Cheesecake Bars are a simple no bake dessert made with a creamy banana cheesecake filling layered over a buttery vanilla wafer crust. This easy 6 ingredient recipe is perfect for parties, holidays, or a quick make ahead dessert everyone will enjoy.
Ingredients
1 11-ounce box Nilla Wafer cookies about 3 cups crushed
1 half cup unsalted butter melted
1 pint heavy whipping cream
3 fourth cup granulated sugar
Three 8 ounce packages cream cheese softened
Two 3.4 ounce packages instant banana cream pudding mix
Optional garnish whipped topping and fresh banana slices
Instructions
- Crush the Nilla Wafer cookies in a food processor until fine crumbs form. You can also place them in a zip lock bag and crush with a rolling pin.
- In a medium bowl, combine the cookie crumbs and melted butter. Mix until evenly coated.
- Press the crumb mixture firmly into the bottom of a parchment lined 9×9 inch pan or 9×13 inch pan. Place in the refrigerator to chill.
- In a chilled mixing bowl, beat the heavy whipping cream and sugar with an electric mixer until stiff peaks form. Set aside.
- In another large bowl, beat the softened cream cheese until smooth. Gradually mix in the banana pudding mixes.
- Fold the whipped cream into the cream cheese mixture and mix until smooth and fluffy.
- Spread the cheesecake mixture evenly over the chilled crust.
- Cover the pan with plastic wrap and refrigerate for at least 8 hours or overnight.
- Slice into bars and garnish with whipped topping and banana slices before serving if desired.
Notes
Make sure the cream cheese is fully softened before mixing to ensure a smooth filling.
Chill the mixing bowl before whipping the cream for better volume and texture.
Store leftovers covered in the refrigerator for up to three days.
For longer storage, wrap tightly and freeze for up to three months. Thaw in the refrigerator before serving.
