Ingredients
1 half mashed ripe banana
1 half cup rolled oats regular or gluten free
1 half cup milk of choice
2 tablespoons chopped pecans or walnuts
1 teaspoon vanilla extract
1 half teaspoon cinnamon
Dash of sea salt
1 tablespoon ground flax optional
2 teaspoons pure maple syrup
Optional toppings
Sliced banana
Extra pecans or walnuts
Additional maple syrup drizzle
Instructions
- Mash the ripe banana in the bottom of a bowl or a jar with a lid.
- Add the rolled oats, milk, chopped nuts, vanilla extract, cinnamon, sea salt, ground flax, and maple syrup.
- Stir well until all ingredients are fully combined.
- Cover and refrigerate for at least 4 hours or overnight.
- In the morning, stir the oats well. Enjoy them chilled, or warm them briefly in the microwave if you prefer.
- Top with sliced banana or extra nuts before serving if desired.
Notes
Adjust the sweetness to your taste. The banana already adds natural sweetness, so the maple syrup can be increased or reduced.
Overnight oats with mashed banana are best eaten within three days.
If preparing several servings for the week, add the mashed banana just before serving for portions that will be eaten later.
For a vegan option, use dairy free milk. For a gluten free version, use certified gluten free oats.
