Description

Banana Bread French Toast is a cozy breakfast recipe that transforms thick slices of banana bread into golden, custardy French toast. Quick to make and easy to customize, it’s ideal for weekend brunch. Top with banana slices, walnuts, and maple syrup for a flavorful twist.

Ingredients

Scale

4 large eggs

¾ cup low-fat milk

1 teaspoon vanilla extract

¼ teaspoon ground cinnamon

8 slices banana bread (1-inch thick)

2 tablespoons butter, divided

Optional toppings: chopped toasted walnuts, fresh banana slices, maple syrup

Instructions

  1. Prepare the Batter: In a medium mixing bowl or a 4-cup measuring cup, whisk together the eggs, milk, vanilla, and cinnamon until well combined.
  2. Soak the Bread: Arrange four slices of banana bread in a 9×13-inch baking dish. Slowly pour in half of the egg mixture. Let the bread soak for about a minute, then gently flip and allow to soak for another minute.
  3. Cook the French Toast: Heat 1 tablespoon of butter in a large nonstick skillet over medium heat. Add the soaked bread slices and cook until each side is golden brown, about 2 to 3 minutes per side. Transfer to a plate and keep warm.
  4. Repeat: Repeat the soaking and cooking process with the remaining banana bread, egg mixture, and butter.
  5. Serve: Garnish the warm French toast with your favorite toppings such as walnut pieces, banana slices, and maple syrup.

Notes

Day-old banana bread works best for soaking.

Avoid over-soaking to prevent sogginess.

Great way to use leftover banana bread.

Customize with spices, fruits, or nut butters.
