Ingredients
For the Blondies:
½ cup unsalted butter, melted
1 cup light brown sugar
2 teaspoons vanilla extract
1 large egg
1 ½ to 2 teaspoons cinnamon
¼ teaspoon salt
1 cup all purpose flour
½ cup mashed banana
For the Frosting:
¼ cup butter
6 tablespoons light brown sugar
2 tablespoons milk
Dash of salt
1 teaspoon vanilla extract
1 cup powdered sugar
Instructions
- Start by preheating your oven to 350 F and preparing an 8 x 8 inch baking pan. Line it with aluminum foil, leaving some overhang on the sides for easy removal, then lightly coat it with cooking spray.
- In a medium bowl, combine the melted butter, brown sugar, and salt. Stir until smooth and well blended. Add the egg, vanilla extract, and cinnamon, mixing until everything is fully incorporated.
- Next, fold in the mashed banana and mix until evenly combined. Add the flour and gently stir until the batter becomes smooth and no dry spots remain.
- Pour the batter into the prepared pan and spread it out evenly. Bake for 25 to 30 minutes, or until the center is set and a toothpick inserted into the middle comes out mostly clean. Let the blondies cool completely in the pan before removing.
- For the frosting, melt the butter in a saucepan over medium heat. Continue cooking while stirring constantly until the butter turns a golden amber color. Carefully add the brown sugar, milk, and a pinch of salt. Stir well and bring the mixture to a gentle boil.
- Remove from heat and let it cool for 10 to 15 minutes. Whisk in the vanilla extract and powdered sugar until smooth. Spread the frosting evenly over the cooled blondies and let it set before slicing into squares.
