Description

Balsamic Garlic Grilled Mushroom Skewers are loaded with bold, smoky flavor and ready in just 20 minutes. A perfect plant-based side or main for BBQ season—quick, easy, and gluten-free!


Ingredients

2 pounds mushrooms, sliced 1/4 inch thick

2 tablespoons balsamic vinegar

1 tablespoon soy sauce or tamari (for gluten-free option)

3 cloves garlic, finely chopped

1/2 teaspoon fresh thyme, chopped

Salt and freshly ground black pepper to taste


Instructions

  1. Marinate the Mushrooms: In a large bowl, whisk together balsamic vinegar, tamari or soy sauce, chopped garlic, thyme, salt, and pepper. Add the mushrooms and stir until well coated. Allow them to marinate for at least 30 minutes.
  2. Preheat the Grill: Set your grill to medium-high heat.
  3. Skewer the Mushrooms: Arrange the marinated mushrooms tightly onto skewers, ensuring even distribution for uniform grilling.
  4. Grill to Perfection: Grill each skewer for 2-3 minutes per side until mushrooms are tender and have a light char.
  5. Serve: Remove from the grill and enjoy hot as a delicious main or side dish.

Notes

Use metal skewers or soak wooden skewers in water for 30 minutes to prevent burning.

Cremini or baby bella mushrooms hold their texture well on the grill.

Add veggies like bell peppers or zucchini for variety.

Red pepper flakes or hot sauce can give it a spicy twist.

Can also be cooked in a grill pan or oven-roasted at 425°F for 15–20 minutes.
