Ingredients
4 boneless, skinless chicken breasts (sliced in half lengthwise to make 8 cutlets)
3/4 cup seasoned breadcrumbs (use gluten-free if needed)
1/4 cup grated Parmesan or Romano cheese
2 tablespoons melted butter or olive oil
3/4 cup part-skim shredded mozzarella cheese
1 cup marinara sauce
Cooking spray
Fresh basil or parsley (optional, for garnish)
Instructions
- Preheat your oven to 450°F and lightly coat a large baking sheet with cooking spray.
- In a shallow bowl, mix together the breadcrumbs and grated Parmesan cheese.
- In another bowl, melt the butter or measure out the olive oil.
- Gently brush each chicken piece with the butter or oil, then coat in the breadcrumb mixture, pressing slightly to ensure the coating sticks.
- Place the breaded chicken cutlets on the baking sheet in a single layer.
- Lightly spray the tops of the chicken with cooking spray for added crispiness.
- Bake in the preheated oven for 25 minutes until the chicken is golden and cooked through.
- Remove from the oven. Spoon about 1 tablespoon of marinara sauce on top of each cutlet.
- Sprinkle each with 1 1/2 tablespoons of mozzarella cheese.
- Return the tray to the oven and bake for another 5 minutes, or until the cheese is bubbly and fully melted.
Notes
Dry the chicken before breading to help the coating stick.
For extra crispiness, use the top oven rack during baking.
You can substitute chicken thighs or use arrabbiata sauce for a spicier version.
