1 (19 oz) bag cheese tortellini, cooked and drained

1 tbsp olive oil

1 lb ground beef

½ cup chopped red onion

2 tbsp minced garlic

2 cups baby spinach

2 cups halved cherry tomatoes

2 tbsp all-purpose flour

1½ cups milk

3 cups shredded triple cheddar cheese, divided

1 cup cooked, crumbled bacon

Salt and pepper, to taste


Instructions

Here’s an easy-to-follow walkthrough:

  1. Cook tortellini per package instructions. Drain well and toss with 1 tbsp olive oil to prevent sticking.
  2. In a large skillet set over medium-high heat, sauté the ground beef, chopped red onion, and minced garlic until the beef is nicely browned.
  3. Add spinach and halved tomatoes to the skillet. Sauté until the spinach wilts and the tomatoes begin to burst.
  4. Sprinkle flour over the mixture. Stir continuously for about a minute to eliminate the raw taste of the flour.
  5. Gradually whisk in the milk. Cook until the sauce thickens slightly.
  6. Stir in 2¾ cups of the shredded cheddar until melted and smooth.
  7. Add the cooked tortellini and crumbled bacon. Stir thoroughly until all ingredients are evenly coated in the rich, cheesy sauce.
  8. Sprinkle the remaining cheese over the top, cover the skillet, and allow it to sit for a few minutes until the cheese is fully melted. Season with salt and pepper to taste. Serve hot.

Notes

Use freshly grated cheese for best melting. Adjust milk to reach desired sauce thickness. Add more vegetables or spices to customize.
