1 (19 oz) bag cheese tortellini, cooked and drained
1 tbsp olive oil
1 lb ground beef
½ cup chopped red onion
2 tbsp minced garlic
2 cups baby spinach
2 cups halved cherry tomatoes
2 tbsp all-purpose flour
1½ cups milk
3 cups shredded triple cheddar cheese, divided
1 cup cooked, crumbled bacon

Here’s an easy-to-follow walkthrough:
- Cook tortellini per package instructions. Drain well and toss with 1 tbsp olive oil to prevent sticking.
- In a large skillet set over medium-high heat, sauté the ground beef, chopped red onion, and minced garlic until the beef is nicely browned.
- Add spinach and halved tomatoes to the skillet. Sauté until the spinach wilts and the tomatoes begin to burst.
- Sprinkle flour over the mixture. Stir continuously for about a minute to eliminate the raw taste of the flour.
- Gradually whisk in the milk. Cook until the sauce thickens slightly.
- Stir in 2¾ cups of the shredded cheddar until melted and smooth.
- Add the cooked tortellini and crumbled bacon. Stir thoroughly until all ingredients are evenly coated in the rich, cheesy sauce.
- Sprinkle the remaining cheese over the top, cover the skillet, and allow it to sit for a few minutes until the cheese is fully melted. Season with salt and pepper to taste. Serve hot.
