2 lbs lean ground beef

1 cup finely chopped yellow onions

10.5 oz can condensed cheddar cheese soup

1/2 cup ketchup

2 tbsp yellow mustard

1 tsp salt

1 tsp black pepper

1 tbsp garlic powder

1 tbsp onion powder

3/4 cup real bacon bits (divided)

3 cups shredded mozzarella and cheddar cheese blend

12 oz can refrigerated Pillsbury biscuits, each cut into 6 pieces


Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet over medium-high heat, add the ground beef with a small amount of butter or margarine.
  3. Cook the beef, breaking it apart as it browns. Once fully cooked, drain the excess grease.
  4. Lower the heat to medium-low and stir in the diced onions. Cook for about 2 minutes, just until they begin to soften.
  5. Mix in the cheddar cheese soup, ketchup, and mustard. Stir until well combined.
  6. Add salt, pepper, garlic powder, and onion powder. Stir to incorporate.
  7. Fold in 1/2 cup of bacon bits.
  8. Transfer the meat mixture into a greased 9×13-inch baking dish, spreading it evenly.
  9. Top with the shredded cheese, then sprinkle the remaining 1/4 cup bacon bits.
  10. Evenly distribute the biscuit pieces over the top.
  11. Bake for 18 to 20 minutes, or until the biscuits are beautifully golden and cooked through.
  12. Remove from the oven and allow the casserole to sit for a few minutes before slicing and serving.

Notes

Brush biscuit pieces with melted butter before baking for extra crispiness. To prep ahead, store cooked beef mixture in the fridge and assemble just before baking. Great for leftovers and freezer-friendly too.
