Description
Apple Pie Enchiladas are a quick and cozy dessert made with soft flour tortillas wrapped around cinnamon apple filling, baked in a rich buttery caramel sauce. This easy recipe delivers classic apple pie flavor without the work of making pie crust, making it perfect for weeknight desserts or holiday gatherings.
Ingredients
6 8 inch flour tortillas
1 21 ounce can apple pie filling or homemade apple pie filling
1 teaspoon ground cinnamon
1 half cup butter
1 half cup white sugar
1 half cup brown sugar
1 half cup water
Optional for serving
Vanilla ice cream
Whipped cream
Caramel sauce
Instructions
Step 1: Preheat and prepare
Preheat your oven to 350 degrees Fahrenheit. Generously butter a 9 x 13 inch baking dish.
Step 2: Soften the tortillas
If the tortillas feel stiff, microwave them for 10 to 15 seconds to make them pliable and easier to roll.
Step 3: Add the filling
Lay a tortilla flat and spoon a heaping quarter cup of apple pie filling slightly off center. Sprinkle evenly with ground cinnamon.
Step 4: Roll and place
Carefully roll the tortilla snugly around the apple filling and arrange it seam side down in the greased baking dish. Repeat with the remaining tortillas.
Step 5: Prepare the caramel sauce
In a medium saucepan over medium heat, combine the butter, white sugar, brown sugar, and water. Bring the mixture to a boil while stirring constantly. Reduce the heat and simmer for about 3 minutes until slightly thickened.
Step 6: Pour and rest
Pour the warm sauce evenly over the enchiladas. Sprinkle extra cinnamon on top if desired. Allow them to rest at room temperature for approximately 20 minutes before baking so the tortillas can absorb the sauce.
Step 7: Bake
Bake for 20 minutes or until golden and bubbling.
Step 8: Serve
Serve warm with a scoop of vanilla ice cream or a spoonful of whipped cream, then finish with a generous drizzle of caramel sauce for extra richness.
Notes
Allowing the enchiladas to rest before baking helps the tortillas absorb the caramel sauce for a soft, pastry like texture.
For added flavor, mix a pinch of nutmeg or apple pie spice into the filling.
Store leftovers in the refrigerator for up to 3 days and reheat before serving.
