Brownie Batter:

2 large eggs

1/2 tsp pumpkin pie spice

Apple Filling:

2 large Gala apples, finely chopped

2 tbsp light brown sugar

1 tbsp unsalted butter

1/2 tsp pure vanilla extract

1/2 tsp ground cinnamon

Maple Glaze:

2 tbsp unsalted butter

1/4 cup pure maple syrup

1/2 cup powdered sugar

1/4 tsp pure vanilla extract

1/4 tsp pumpkin pie spice


Instructions

  1. Prepare the Apple Filling: In a medium pot over low heat, cook the chopped Gala apples with brown sugar, butter, vanilla, and cinnamon for about 5 to 7 minutes until the apples are tender. Set aside and allow to cool completely.
  2. Preheat and Prep: Preheat your oven to 350 degrees Fahrenheit. Spray an 11×7 baking dish with baking spray and set aside.
  3. Mix the Wet Ingredients: In a large mixing bowl, cream together the softened butter, granulated sugar, and dark brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla and salt.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, cinnamon, and pumpkin pie spice. Slowly incorporate the dry ingredients into the wet ingredients, mixing just until everything is fully combined.
  5. Assemble the Layers: Spread half of the batter evenly in the prepared baking dish. Layer the cooled apple filling over the batter, then gently spread the remaining batter on top.
  6. Bake: Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool slightly in the pan.
  7. Make the Maple Glaze: In a small saucepan, melt the butter with the maple syrup, vanilla extract, and pumpkin pie spice over medium heat. Once the butter is fully melted, remove from heat and whisk in the powdered sugar until smooth.
  8. Glaze and Cool: Pour the maple glaze evenly over the warm brownies. Let cool completely before slicing into bars.

You can use Honeycrisp or Fuji apples for a firmer bite.
