Ingredients
For the Chimichangas:
1 (8 oz) package cream cheese, softened
½ cup granulated sugar
1 large egg
2 tsp pure vanilla extract
10–12 medium flour tortillas
1 (21 oz) can cherry pie filling
2 tbsp vegetable oil, for brushing
2 tbsp salted butter, melted
For the Glaze:
½ cup powdered sugar, plus extra for dusting
3–4 tbsp heavy cream
1 tsp pure vanilla extract
Instructions
- In a medium bowl, combine softened cream cheese, granulated sugar, egg, and vanilla extract. Mix using a hand or stand mixer until the texture is smooth and creamy, approximately 2–3 minutes.
- Warm tortillas briefly—about 10 seconds in the microwave—to make them pliable.
- Spoon 2–3 tablespoons of the cheesecake filling into the center of each tortilla, keeping about a one-inch border around the edges. Top with 2–3 tablespoons of cherry pie filling.
- Fold in the sides over the filling, then roll up from the bottom edge, keeping the filling secure.
- Lightly brush vegetable oil along the folded seam of each rolled tortilla to ensure it stays sealed. Place seam‑side down in the air fryer basket.
- Lightly brush the tops and sides of each chimichanga with oil. Set air fryer to 360 °F (180 °C) on “bake” or air fry mode, and cook for 8–10 minutes, until golden brown.
- Remove from air fryer and immediately brush with melted salted butter. Let cool slightly on a rack.
- While cooling, whisk together powdered sugar, heavy cream, and vanilla until smooth.
- Drizzle glaze over slightly cooled chimichangas so it doesn’t melt completely. Sprinkle with extra powdered sugar and more cherry filling if desired.
