These 4 Ingredient Date Caramels are a simple no bake treat made with Medjool dates, almond butter, coconut oil, and chocolate. They are naturally sweet, vegan, gluten free, and perfect for snacks, desserts, or homemade gifts. With a chewy caramel center and a rich chocolate coating, this easy recipe comes together with just a few ingredients and minimal effort.
Ingredients
For the date caramel
1 cup packed Medjool dates, pitted
2 tablespoons creamy almond butter or any nut or seed butter
1 tablespoon coconut oil, melted
For the chocolate coating
1 cup chocolate chips or 8 ounce chocolate bar, chopped
2 teaspoons coconut oil, melted
Instructions
- Place the pitted dates in a bowl and cover with very hot water. Let them soak for about 10 minutes until soft.
- Drain the soaked dates and transfer them to a food processor or high speed blender. Add the almond butter and melted coconut oil. Blend until the mixture becomes completely smooth.
- Line a 9 by 5 inch loaf pan with parchment paper. Transfer the caramel mixture to the pan and spread it evenly.
- Place the pan in the freezer for 2 to 3 hours until the caramel layer is firm to the touch.
- Remove the caramel from the freezer and lift it out of the pan using the parchment paper. Place it on a cutting board and slice into 12 small squares.
- In a heat safe bowl, combine the chocolate chips and 2 teaspoons melted coconut oil. Melt in the microwave in short intervals or over a double boiler until smooth.
- Dip each caramel square into the melted chocolate until fully coated. Use a fork to lift it out and allow excess chocolate to drip off.
- Place the chocolate coated caramels on a parchment lined plate and transfer them to the refrigerator for about 1 hour until the chocolate has hardened.
Notes
Store the date caramels in an airtight container in the refrigerator for up to one week.
For longer storage, keep them in the freezer for up to three months.
If the caramel mixture is too thick while blending, add a small amount of warm water to help it blend smoothly.
You can replace almond butter with peanut butter, cashew butter, sunflower seed butter, or tahini.
A small pinch of sea salt can be added for a salted caramel flavor.
