- 3 cups unsweetened shredded coconut
- 1 (14-ounce) can sweetened condensed milk
- 15 ounces dark chocolate (or semi-sweet chocolate)
Instructions
- In a medium bowl, mix the shredded coconut and sweetened condensed milk until well combined.
- Shape the mixture into 12 logs using wet hands and place them on a parchment-lined baking sheet.
- Freeze the bars for about 20 minutes until firm.
- Melt 10 ounces of the chocolate in the microwave, stirring every 15 seconds until smooth. Add the remaining 5 ounces of chocolate and stir until fully melted.
- Use a fork to dip each coconut log into the melted chocolate, covering completely. Let any excess chocolate drip off before placing the bars back on the parchment paper.
- Let the chocolate set at room temperature or refrigerate to speed up the process.
Notes
- For easier shaping, wet your hands to prevent sticking.
- Want a little extra crunch? Add chopped almonds to the coconut mixture for a homemade Almond Joy twist!
- You can use milk chocolate or semi-sweet chocolate if you prefer a sweeter flavor.
