Ingredients
1 2 3 cups nonfat vanilla Greek yogurt about 400 g
4 large eggs
4 tablespoons cornstarch about 32 g
Optional
1 4 cup sugar for extra sweetness
Honey for serving optional
Instructions
- Preheat your air fryer to 320°F 160°C or your oven to 350°F 177°C.
- Lightly spray a 6 inch round cake pan with cooking spray. Line the inside with a large sheet of parchment paper so it covers the entire interior and rises slightly above the edges.
- In a large mixing bowl, add the Greek yogurt and eggs. Whisk until the eggs are fully blended with the yogurt.
- If you want a sweeter cake, add the sugar and mix until combined.
- Stir the cornstarch into the bowl and whisk until the batter is silky smooth and completely free of lumps.
- Pour the batter into the prepared cake pan.
- For the air fryer method, cook for 20 to 23 minutes until the cake is puffed and the top is lightly caramelized. The center should not be liquid.
- For the oven method, bake for 70 to 75 minutes until the cake is puffed, set in the center, and lightly golden on top.
- Let the cake cool at room temperature for about 30 minutes. The cake may deflate slightly as it cools.
- Refrigerate the cake for at least 2 hours before serving to allow the texture to set.
- Remove from the refrigerator 15 to 30 minutes before serving. Drizzle with honey if desired.
Notes
This cake has a mild sweetness. If you prefer a sweeter dessert, add about 1 4 cup sugar to the batter.
You can also drizzle honey or your favorite sweetener over the cake before serving.
If using plain Greek yogurt instead of vanilla, you may want to add extra sugar for sweetness.
Chilling the cake in the refrigerator helps develop flavor and improves the creamy texture.
The cake may deflate slightly after baking, which is completely normal.
